Creamy and cheesy low carb chicken casserole with broccoli and ranch dressing. A family-friendly keto dinner baked to bubbly perfection.
Ingredients
5 cups broccoli florets
4 cups cooked chicken, shredded or diced
3 cloves garlic, finely minced
1/2 cup shredded mozzarella
1/2 cup shredded cheddar
1 cup ranch dressing
1/2 cup shredded cheddar (for topping)
1/2 cup shredded mozzarella (for topping)
Instructions
1. Preheat oven to 375°F and position rack in center.
2. Blanch fresh broccoli for 1–2 minutes until bright green, then drain thoroughly.
3. In a large bowl combine chicken, broccoli, garlic, ranch dressing, mozzarella, and cheddar.
4. Mix until evenly coated.
5. Transfer mixture to a 9×13-inch casserole dish and spread evenly.
6. Sprinkle remaining cheeses evenly over the top.
7. Bake for 15 minutes or until hot and bubbly.
8. Let rest 5 minutes before serving.
Notes
Drain broccoli well to prevent excess moisture.
Shred cheese fresh for best melting.
Store leftovers up to 4 days in refrigerator.
