Description
Slow Cooker Lemon Herb Chicken and Rice made with tender chicken breasts, fluffy rice, fresh lemon juice, and herbs. An easy whole food family dinner.
Ingredients
4 boneless skinless chicken breasts
1 1/2 cups long-grain white rice
2 cups chicken broth
1 cup fresh lemon juice
2 tsp dried thyme
2 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1 tbsp olive oil
1 lemon sliced
Fresh parsley for garnish
Instructions
1. Season chicken with salt, pepper, garlic powder, and onion powder.
2. Optional: Sear chicken in olive oil.
3. Mix rice, broth, lemon juice, thyme, and oregano.
4. Pour over chicken in slow cooker.
5. Add lemon slices.
6. Cook LOW 6-7 hours or HIGH 3-4 hours.
7. Check internal temp 165°F.
8. Fluff rice and serve with parsley garnish.
Notes
Use fresh lemon juice.
Avoid stirring during cooking.
Store refrigerated up to 4 days.
