Description
A fresh and easy healthy Greek chicken bowl made with grilled marinated chicken, crisp veggies, whole grains, and creamy tzatziki. High protein, great for meal prep, and full of Mediterranean flavor.
Ingredients
2 boneless chicken breasts
3 tbsp olive oil
2 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
Salt and pepper to taste
2 cups cooked quinoa or brown rice
1 cup diced cucumbers
1 cup halved cherry tomatoes
1/4 cup sliced red onions
1/4 cup kalamata olives
1/3 cup crumbled feta
1/2 cup Greek yogurt
1 tbsp dill
1/2 tsp lemon zest
Instructions
1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken 30 minutes.
2. Grill chicken 5–6 minutes per side, rest, then slice.
3. Divide cooked quinoa or rice into bowls.
4. Add cucumbers, tomatoes, onions, olives, and feta.
5. Top with chicken and tzatziki. Serve with lemon.
Notes
Swap quinoa for cauliflower rice for low-carb.
