Description

Easy curry lentil soup made in one pot with lentils, potatoes, vegetables, and warm spices. Ready in 30 minutes.


Ingredients

2 tbsp olive oil

1 onion

2 carrots

3 garlic cloves

1 tsp ginger

2 tsp curry powder

1 tsp turmeric

1 tsp cumin

1/4 tsp red pepper flakes

5 cups vegetable broth

1 can crushed tomatoes

1 cup dried lentils

1 lb potatoes

5 oz kale or spinach

1 tsp salt

1/8 tsp black pepper


Instructions

1. Cook onion and carrots in oil.

2. Add garlic, ginger, and spices.

3. Add broth, tomatoes, lentils, potatoes, and greens.

4. Simmer until lentils are tender.

5. Season and serve.

Notes

Serve with lime juice or rice.

Add more broth if needed.
