Ingredients
1.5 pounds boneless, skinless chicken breasts
1 cup diced yellow onion
2 cloves garlic, minced
3 cups low-sodium chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 tablespoon Italian seasoning
Salt, to taste
Black pepper, to taste
1 cup heavy cream (or half-and-half for lighter option)
1 cup freshly grated Parmesan cheese
1 cup cheese tortellini (fresh or frozen)
1 cup fresh spinach, roughly chopped
Fresh basil, chopped (for garnish)
Optional: extra grated Parmesan for serving
Instructions
1. Place the chicken breasts in an even layer at the bottom of the Crock Pot.
2. Add diced onion and minced garlic over the chicken.
3. Pour in the chicken broth and the entire can of diced tomatoes with their juices. Stir gently to combine.
4. Sprinkle Italian seasoning evenly over the mixture. Season with salt and black pepper to taste.
5. Cover and cook on LOW for 6 hours, or until the chicken is fully cooked and tender enough to shred easily.
6. Carefully remove the chicken breasts from the slow cooker and place them on a cutting board. Shred the chicken using two forks.
7. Return the shredded chicken to the Crock Pot and stir to combine with the broth.
8. Add the heavy cream and freshly grated Parmesan cheese. Stir thoroughly until the cheese melts completely and the soup becomes creamy and smooth.
9. Add the tortellini and fresh spinach to the soup. Stir gently to combine.
10. Switch the slow cooker to HIGH and cook for an additional 25–30 minutes, or until the tortellini is tender and fully heated through.
11. Taste and adjust seasoning if needed.
12. Ladle into bowls and garnish with chopped fresh basil and additional Parmesan before serving.
Notes
Do not add tortellini at the beginning of cooking, as it can become overly soft.
For best flavor and smooth melting, use freshly grated Parmesan instead of pre-shredded cheese.
If the soup thickens too much, add a splash of warm chicken broth to loosen it.
For meal prep, cook the base first and add cream and tortellini just before serving.
