Description

Crispy Corned Beef rubbed with Dijon mustard and coated in black pepper, fennel, garlic, and brown sugar. Slow cooked until tender and finished under the broiler for a caramelized crust.


Ingredients

34 pounds corned beef with spice packet

2 tablespoons Dijon mustard

3 cloves garlic, minced

3 tablespoons brown sugar

1/2 teaspoon coarse black pepper

1/2 teaspoon fennel seeds

1 cup apple juice or apple cider

2 tablespoons apple cider vinegar


Instructions

1. Rinse and pat dry corned beef.

2. Crush spice packet and mix with garlic, sugar, pepper, and fennel.

3. Rub Dijon over fatty side.

4. Press seasoning mixture onto mustard.

5. Add apple juice and vinegar to slow cooker.

6. Place corned beef seasoned side up and cook low 6–8 hours.

7. Broil 5–6 minutes to crisp top before serving.

Notes

Slice against the grain.

Let rest before slicing.
