Description
This creamy white bean and turkey pumpkin chili is cozy, healthy, and packed with protein, fiber, and warm fall spices.
Ingredients
3 tablespoons olive oil
1 cup onion, chopped
1 1/2 cups carrots, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
1 tablespoon ground coriander
1 tablespoon paprika
1 teaspoon ground cumin
1/2 teaspoon crushed red chili
1/2 teaspoon black pepper
1 1/2 pounds ground turkey
2 tablespoons fresh herbs
15 oz pumpkin purée
2 cans cannellini beans
2 cups chicken broth
Kosher salt
1/2 cup heavy cream (optional)
Instructions
1. Heat oil and sauté onion, carrots, and celery.
2. Add garlic and spices and stir until fragrant.
3. Add turkey and cook until browned.
4. Stir in herbs, pumpkin, beans, broth, and salt.
5. Simmer gently for 20 minutes.
6. Remove from heat and stir in cream if using.
7. Taste and adjust seasoning before serving.
Notes
Fresh herbs enhance flavor.
Cream is optional.
Freezes well for later meals.
