Description

Creamy Tuscan Chicken made with seared chicken breasts, sun-dried tomatoes, spinach, and parmesan in a rich garlic cream sauce.


Ingredients

4 chicken breasts (6 oz each)

Salt and black pepper to taste

½ tsp Italian seasoning

1 Tbsp all-purpose flour

1 Tbsp olive oil

1 Tbsp butter

¼ cup chicken broth

1 tsp Dijon mustard

½ cup chopped yellow onion

1½ cups heavy cream

½ cup grated parmesan cheese

2 cups baby spinach

½ cup sun-dried tomatoes, sliced

1 Tbsp fresh basil (optional)


Instructions

1. Season and flour chicken strips.

2. Sear chicken in olive oil and butter until golden. Remove and set aside.

3. Add chicken broth and Dijon mustard to pan and deglaze.

4. Add onion and simmer briefly.

5. Stir in heavy cream and parmesan until smooth.

6. Add spinach and sun-dried tomatoes.

7. Return chicken to pan and cook until done.

8. Finish with basil and seasoning.

Notes

Serve over pasta or rice.

Add garlic for extra flavor.

Great reheated the next day.
