Description
Creamy spinach and mushroom gnocchi made in one pan in just 20 minutes.
Ingredients
1 tbsp olive oil
8 oz crimini mushrooms, sliced
Salt and pepper
16 oz potato gnocchi
1/2 cup chicken broth
1 cup heavy cream
4 garlic cloves, minced
1/2 tsp Italian seasoning
1/2 tsp smoked paprika
5 oz fresh spinach
Red pepper flakes to taste
Instructions
1. Brown mushrooms.
2. Remove half and set aside.
3. Add gnocchi, broth, cream, garlic, and spices.
4. Simmer until gnocchi is tender.
5. Add spinach and cook until wilted.
6. Top with mushrooms and serve.
Notes
Use vegetable broth to keep it vegetarian.
Add liquid if sauce thickens.
