Description
Creamy one pot ravioli soup made with Italian sausage, cheese ravioli, spinach, and Parmesan in a rich Tuscan-style broth. Cozy and easy.
Ingredients
1 tablespoon olive oil
1 lb Italian sausage, casing removed
1 small onion, diced
3–4 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika (optional)
1/4 teaspoon red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
20 oz cheese ravioli
1/2 cup sun-dried tomatoes, chopped
3 cups baby spinach
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Brown sausage in olive oil.
2. Add onion and cook until soft.
3. Stir in garlic and seasonings.
4. Add broth and cream and simmer.
5. Add ravioli and sun-dried tomatoes.
6. Stir in spinach and Parmesan.
7. Season and serve hot.
Notes
Use gentle heat when adding cream.
Frozen ravioli works well.
Serve with crusty bread.
