Description

A cozy creamy mushroom chicken and wild rice soup made with tender chicken, earthy mushrooms, wild rice, and a rich parmesan broth. Perfect comfort food.


Ingredients

3 Tbsp butter, divided

1 lb mushrooms, sliced

1 onion, diced

2 carrots, diced

2 celery stalks, diced

2 garlic cloves, chopped

1 tsp fresh thyme

6 cups chicken broth

1 cup wild rice or rice blend

1 1/2 cups cooked chicken

1 cup milk or cream

1 cup grated parmesan cheese

Salt and pepper to taste


Instructions

1. Cook mushrooms until browned.

2. Sauté vegetables until tender.

3. Add garlic and thyme.

4. Add broth, rice, chicken, and mushrooms.

5. Simmer until rice is tender.

6. Stir in milk and parmesan.

7. Season and serve.

Notes

Wild rice takes longer to cook.

Use freshly grated parmesan.

Add extra broth if needed.
