Description
Creamy gnocchi with spinach and feta made with crispy pan-seared gnocchi and simple, healthy ingredients.
Ingredients
1 lb gnocchi
2 Tbsp olive oil
4 cups fresh spinach
4 oz feta cheese, crumbled
2 garlic cloves, minced
Salt to taste
Black pepper to taste
1 tsp red pepper flakes (optional)
Instructions
1. Boil gnocchi until they float and drain.
2. Pan-sear gnocchi in olive oil until crispy.
3. Add garlic and sauté briefly.
4. Stir in spinach until wilted.
5. Season and fold in feta cheese.
6. Serve immediately.
Notes
Avoid overcrowding the pan when crisping gnocchi.
Add a splash of cooking water if extra moisture is needed.
