Description
A classic Italian minestrone soup loaded with vegetables, beans, pasta, and a rich tomato broth just like nonna made.
Ingredients
1 tbsp olive oil
1 tbsp butter
1 medium onion, chopped
2 sticks celery, chopped
3 medium carrots, peeled & sliced
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
4 cups chicken or vegetable broth
1 small zucchini, chopped
1 cup fresh green beans, chopped
1 (14 oz) can red kidney beans, drained
1 (14 oz) can cannellini beans, drained
1/2 tsp Italian seasoning
3/4 cup uncooked elbow macaroni
Salt & pepper to taste
Fresh basil (optional)
Freshly grated parmesan cheese
Instructions
1. Sauté oil, butter, onion, celery, carrots, and garlic for 7–10 minutes.
2. Add tomatoes, broth, vegetables, beans, and seasoning and bring to a boil.
3. Reduce heat and simmer covered for 10 minutes.
4. Stir in pasta and simmer uncovered 15–20 minutes until tender.
5. Season to taste and serve with basil and parmesan.
Notes
Add extra broth if soup becomes too thick.
Leftovers thicken as pasta absorbs liquid.
