Description
This classic Greek lemon chicken soup is creamy, comforting, and full of bright lemon flavor with tender chicken and rice.
Ingredients
8 cups chicken broth
1/2 cup freshly squeezed lemon juice
1/2 cup shredded carrot
1/2 cup finely diced onion
1/2 cup minced celery
6 tablespoons chicken soup base
1/4 teaspoon ground white pepper
1/4 cup margarine
1/4 cup all-purpose flour
8 egg yolks
1 cup cooked white rice
1 cup diced cooked chicken
Lemon slices for garnish
Instructions
1. Simmer soup base ingredients until vegetables are tender.
2. Stir in margarine and flour mixture to thicken.
3. Temper egg yolks with hot soup and add back to pot.
4. Gently heat without boiling.
5. Add rice and chicken and warm through.
6. Garnish and serve.
Notes
Do not boil after adding eggs.
Temper yolks slowly.
Adjust lemon to taste.
