Description
A buttery, chewy toffee topped with rich chocolate and chopped nuts a festive holiday classic that’s easy to make and perfect for gifting.
Ingredients
1 cup (2 sticks) unsalted butter
1 cup granulated sugar
1/2 cup light brown sugar
2 tablespoons light corn syrup
2 tablespoons water
1 teaspoon vanilla extract
1 cup chopped nuts (almonds, pecans, or walnuts)
1 cup semi-sweet chocolate chips
Instructions
1. Line a 9×13-inch pan with parchment and sprinkle half the nuts.
2. In a saucepan, combine butter, sugars, corn syrup, and water over medium heat.
3. Cook, stirring constantly, until the mixture reaches 285°F (soft crack stage).
4. Remove from heat, stir in vanilla, and pour evenly over nuts.
5. Sprinkle chocolate chips over hot toffee and spread once melted.
6. Top with remaining nuts and allow to cool completely.
7. Break into pieces and store in an airtight container.
Notes
Use a candy thermometer for accuracy.
For chewier toffee, cook to 280°F instead of 285°F.
Try topping with sea salt or crushed peppermint for variety.
Keeps fresh up to 2 weeks in a sealed container or freeze for longer storage.
