Description
Sweet and spicy chili brown sugar chicken roasted with tender sweet potatoes in one easy sheet pan dinner.
Ingredients
⅓–½ cup brown sugar
2–3 Tbsp chili powder
2 tsp cumin
1–2 tsp paprika
½ tsp garlic powder
¼ tsp cayenne (optional)
1.5–2 lb sweet potatoes diced
4 Tbsp olive oil
Salt and pepper to taste
1.5–2 lb boneless skinless chicken breasts
1 large red onion
Fresh parsley or cilantro (optional)
Instructions
1. Roast sweet potatoes with olive oil and seasoning.
2. Mix spice rub ingredients.
3. Pound chicken to even thickness.
4. Add chicken and onion to pan.
5. Coat chicken generously with spice rub.
6. Bake until chicken reaches 165°F.
7. Rest, garnish, and serve.
Notes
Watch closely to avoid burning sugar.
