Description
Chickpea salad sandwich made with mashed chickpeas vegetables and creamy dressing for an easy vegan lunch.
Ingredients
2 cans chickpeas
2 tablespoons celery
2 tablespoons onion
2 tablespoons parsley
4 to 5 tablespoons mayo
2 to 3 teaspoons mustard
1/2 teaspoon salt
Instructions
1. Simmer chickpeas 10 minutes.
2. Drain and mash chickpeas.
3. Add vegetables and dressing.
4. Mix well.
5. Adjust seasoning.
6. Chill 1 hour.
7. Serve on bread.
Notes
Use vegan mayo if needed.
Chill for best flavor.
Adjust texture to preference.
