Description
Juicy chicken street tacos made with seasoned chicken thighs, warm corn tortillas, fresh guacamole, onion, cilantro, and queso fresco.
Ingredients
2 lbs boneless chicken thighs
12 corn tortillas
3 ripe avocados
1 white onion
1 bunch fresh cilantro
2 limes
4 oz queso fresco cheese
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
Instructions
1. Season chicken with chili powder cumin paprika salt and pepper.
2. Let chicken marinate for at least 15 minutes.
3. Mash avocados with lime juice and salt to make guacamole.
4. Dice onion chop cilantro crumble cheese and cut lime into wedges.
5. Cook chicken in hot skillet for 6 to 8 minutes per side until cooked through.
6. Slice cooked chicken into small pieces.
7. Warm tortillas in skillet or over flame.
8. Fill tortillas with chicken.
9. Top with guacamole onion cilantro and cheese.
10. Serve immediately with lime wedges.
Notes
Chicken thighs provide the juiciest taco filling.
Warm tortillas before assembling tacos.
Serve with salsa rice or beans.
