Description
Chicken Poblano Soup made with shredded chicken, black beans, corn, and melted cheese in a creamy Tex-Mex broth. Ready in 30 minutes.
Ingredients
1 tbsp unsalted butter
1/2 cup chopped yellow onion
1 poblano pepper, chopped
2 cups shredded chicken
1 can black beans, drained
1/2 cup frozen corn
3 cups chicken broth
1/2 cup heavy cream
1/2 cup shredded cheese
1-2 tsp fresh lime juice
Seasonings: garlic powder, onion powder, chili powder, oregano, salt, pepper, cumin
Instructions
1. Sauté onion and poblano in butter.
2. Add chicken, beans, corn, broth, and seasonings.
3. Simmer 15 minutes.
4. Stir in cream and cheese.
5. Simmer again and finish with lime juice.
6. Serve garnished with cilantro.
Notes
Mash beans to thicken.
Swap heavy cream for coconut milk for dairy-free.
Store refrigerated up to 4 days.
