Ingredients

2 large boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup flour

1/4 cup Parmesan cheese, finely grated

1 teaspoon garlic powder

3 tablespoons olive oil

1 tablespoon salted butter

1/2 cup dry white wine, like chardonnay or pinot grigio

4 cloves garlic, thinly sliced

2 tablespoons capers, drained

1 cup chicken broth

2 tablespoons lemon juice

2 tablespoons cold salted butter

1/4 cup fresh parsley, roughly chopped


Instructions

1. Combine the flour, Parmesan cheese, garlic powder, salt, and pepper on a large plate.

2. Cut each chicken breast into 3 thinner slices.

3. Place the chicken between sheets of plastic wrap and pound to about 1/4 inch thick.

4. Pat the chicken dry and dredge each piece in the flour mixture. Tap off excess.

5. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.

6. Sear the chicken in batches for 3 to 4 minutes per side, until golden brown. Add a splash of olive oil or reduce heat as needed.

7. Remove the chicken and set aside on a plate.

8. Carefully wipe the pan, leaving a few browned bits behind for flavor.

9. Add the white wine and sliced garlic to the skillet over medium heat.

10. Let the wine bubble gently for 4 to 5 minutes until mostly reduced, scraping up any brown bits from the pan.

11. Add the capers, chicken broth, and lemon juice. Stir to combine.

12. Return the chicken and any juices from the plate to the skillet.

13. Spoon the sauce over the chicken and partially cover. Cook for 3 to 5 minutes.

14. Reduce heat to low and add the cold butter. Let it melt into the sauce, then spoon the sauce over the chicken again.

15. Remove from heat, garnish with fresh parsley, and serve immediately.

Pound the chicken thin for the best texture and fast, even cooking.

Fresh lemon juice gives the sauce the brightest flavor.

Cold butter added at the end creates a silky, glossy finish.
