Description
A cozy and creamy Chicken Orzo Tomato Soup made with tender chicken, tomato broth, soft orzo pasta, and herbs for the perfect comforting meal.
Ingredients
2 tbsp olive oil
1 yellow onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
2 cups cooked shredded chicken
6 cups chicken broth
1 can crushed tomatoes (28 oz)
2 tbsp tomato paste
3/4 cup orzo pasta
1/2 cup heavy cream
1 tsp dried basil
1 tsp dried oregano
1/2 tsp paprika
Salt to taste
Pepper to taste
Fresh parsley for garnish
Instructions
1. Heat olive oil and sauté onion, carrots, and celery for 5 minutes.
2. Add garlic and cook for 1 minute.
3. Stir in crushed tomatoes, tomato paste, and broth; simmer 10 minutes.
4. Add chicken, basil, oregano, paprika, salt, and pepper.
5. Add orzo and simmer 8–10 minutes.
6. Stir in cream and heat gently.
7. Serve warm with parsley.
Notes
Cook orzo separately if storing leftovers.
Use rotisserie chicken for convenience.
Add spinach during the last 2 minutes for extra nutrients.
