Description

Cozy chicken lemon rice soup with tender chicken, vegetables, rice, and a bright lemony broth.


Ingredients

1 tbsp olive oil

1 yellow onion, diced

3 carrots, diced

3 celery stalks, diced

1 1/2 tsp salt, divided

1 tsp black pepper, divided

3 garlic cloves, minced

1 tsp dried thyme

1 1/2 lbs chicken thighs

2 bay leaves

8 cups water

1/2 cup short-grain rice

1/3 cup lemon juice

Parsley for serving


Instructions

1. Saute vegetables.

2. Add garlic and thyme.

3. Add chicken, rice, water, and bay leaves.

4. Simmer until cooked.

5. Chop chicken and return to pot.

6. Stir in lemon juice and parsley.

Notes

Add lemon after cooking.

Add extra liquid when reheating.
