Description

Comforting chicken detox soup made with lean protein and low-carb vegetables. Keto-friendly, Whole30-style, and nourishing.


Ingredients

1 tablespoon olive oil

1 lb boneless skinless chicken breasts or thighs

1 yellow onion, diced

3 garlic cloves, minced

3 celery stalks, sliced

2 carrots, sliced

1 zucchini, chopped

2 cups cauliflower florets

6 cups chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon turmeric

Salt and pepper to taste


Instructions

1. Sauté onion and garlic in olive oil.

2. Add chicken and lightly sear.

3. Add vegetables and seasoning.

4. Pour in broth and simmer until cooked.

5. Shred chicken and return to soup.

6. Season and serve.

Great for meal prep.

Freezes well.
