Description
Chicken and Spinach Casserole with Cream Cheese made with tender chicken, fresh spinach, and melted mozzarella for an easy family dinner.
Ingredients
2 large boneless skinless chicken breasts
2 tbsp olive oil divided
3 cloves garlic minced
1 tbsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
2 cups fresh spinach
8 oz cream cheese softened
1 cup shredded mozzarella divided
1/2 cup Parmesan cheese optional
Instructions
1. Preheat oven to 400°F and grease baking dish.
2. Slice and pound chicken.
3. Marinate chicken with oil, garlic, and seasonings.
4. Wilt spinach in skillet.
5. Mix cream cheese, spinach, and half mozzarella.
6. Arrange chicken in dish.
7. Spread cream mixture over chicken.
8. Top with remaining mozzarella.
9. Bake 20-30 minutes until chicken reaches 165°F.
Notes
Drain spinach well.
Do not overbake.
Store leftovers up to 4 days.
