Description
This chicken and potatoes with Dijon cream sauce is a rich, comforting one-pan dinner made with tender chicken, baby potatoes, and a creamy garlic Dijon sauce.
Ingredients
3 medium boneless skinless chicken breasts
2 teaspoons Italian seasoning or Herbs de Provence
Salt and pepper to taste
2 tablespoons butter
2 tablespoons olive oil
1/2 lb baby potatoes, halved or quartered
1 tablespoon butter
1 teaspoon minced garlic
1 cup chicken broth
2 tablespoons Dijon mustard
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
Instructions
1. Preheat oven to 375°F.
2. Season chicken and potatoes.
3. Brown chicken and potatoes in butter and oil.
4. Remove from pan.
5. Prepare Dijon cream sauce.
6. Return chicken and potatoes to pan.
7. Bake until cooked through.
8. Spoon sauce over and serve.
Notes
Use evenly sized potatoes.
Do not overcook cream sauce.
Great for weeknight dinners.
