Description

Crispy cheesy spinach quesadillas filled with mozzarella, feta cheese, and fresh baby spinach. Pan-fried until golden brown with melty cheese inside for an easy vegetarian lunch or dinner.


Ingredients

4 large flour tortillas

3 cups fresh baby spinach

1 1/2 cups shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 tablespoon olive oil or butter for cooking

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt to taste

Black pepper to taste


Instructions

1. In a medium bowl combine spinach mozzarella cheese feta cheese garlic powder onion powder salt and pepper.

2. Heat olive oil in a large skillet over medium heat.

3. Place one tortilla in the skillet.

4. Spread the spinach and cheese mixture evenly over half of the tortilla.

5. Fold the tortilla over to create a half-moon shape.

6. Cook for about 2 to 3 minutes until the bottom becomes golden brown.

7. Carefully flip the quesadilla and cook the other side until crispy and the cheese melts.

8. Transfer to a cutting board and let rest for 1 minute.

9. Slice into wedges and serve warm.

Notes

Freshly shredded mozzarella melts best.

Cook over medium heat to prevent burning the tortilla.

Serve with salsa guacamole or sour cream for dipping.

You can add sautéed mushrooms onions or peppers for extra flavor.
