Description

Cheesy Ranch Potatoes and Smoked Sausage baked with tender potatoes, smoky sausage, and a rich creamy cheese sauce.


Ingredients

4 cups diced russet potatoes

1 tsp olive oil

14 oz smoked sausage, sliced

4 Tbsp butter

¼ cup all-purpose flour

2 cups half-and-half or milk

¼ tsp garlic powder

8 oz Velveeta cheese, cubed

1 cup shredded sharp cheddar cheese

Salt and black pepper to taste


Instructions

1. Preheat oven to 350°F and grease a 9-inch baking dish.

2. Boil potatoes until just tender, drain, and place in dish.

3. Brown sausage in oil and add to dish.

4. Make roux with butter and flour, then whisk in milk.

5. Add garlic powder, Velveeta, and half the cheddar.

6. Pour sauce over potatoes and sausage.

7. Top with remaining cheese and bake 25–30 minutes.

Notes

Undercook potatoes slightly.

Add vegetables if desired.

Serve hot.
