Description

Easy broccoli cheese soup recipe made with just 5 ingredients: tender broccoli, rich cheddar cheese, creamy broth, and butter for a cozy, comforting bowl.


Ingredients

4 cups broccoli florets, chopped

2 cups low-sodium chicken or vegetable broth

1 1/2 cups shredded cheddar cheese

1 cup heavy cream or half-and-half

2 tablespoons butter

Salt and black pepper, to taste


Instructions

1. Melt the butter in a large pot over medium heat.

2. Add the chopped broccoli and sauté for 2–3 minutes to enhance the flavor.

3. Pour in the broth, bring to a gentle simmer, and cook until the broccoli is tender, about 8–10 minutes.

4. Reduce the heat to low and stir in the cream or half-and-half.

5. Add the shredded cheddar a handful at a time, stirring constantly until melted and smooth.

6. Lightly blend part of the soup with an immersion blender for a thicker texture if desired, then season with salt and pepper and serve warm.

Notes

Use freshly shredded cheddar for the smoothest, creamiest melt.

Substitute vegetable broth to keep the soup vegetarian.

Blend more or less of the soup to adjust how thick and chunky it is.

The soup will thicken as it cools; thin with a splash of broth or cream when reheating.
