Description

This easy breakfast sausage casserole is layered with buttery hash browns, savory sausage, fluffy eggs, and melted cheese. Perfect for overnight prep or last-minute brunch.


Ingredients

1/2 cup butter

30 oz frozen hash browns

1 lb breakfast sausage

1/2 green pepper, chopped

1/2 red pepper, chopped

1/2 small onion, diced

1 1/2 cups Monterey Jack cheese

1 1/2 cups sharp cheddar cheese

8 large eggs

1 1/3 cups half and half

1 tsp seasoned salt

1/2 tsp kosher salt

1/2 tsp black pepper

1/4 tsp dry mustard


Instructions

1. Preheat oven to 400°F.

2. Spread frozen hash browns in greased 9×13 dish.

3. Pour melted butter over potatoes and season.

4. Bake 30–35 minutes, then reduce oven to 350°F.

5. Cook sausage with peppers and onions until browned.

6. Layer sausage over potatoes and add cheese.

7. Whisk eggs, dairy, and seasonings.

8. Pour egg mixture evenly over casserole.

9. Bake 35–45 minutes until set.

10. Rest 5 minutes before serving.
