Description
Fluffy blueberry lemon pancake bites baked in mini muffin form for easy breakfasts and snacks.
Ingredients
2 cups all-purpose flour
⅓ cup sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
2 large eggs
¼ cup melted butter
1 Tbsp lemon zest
2 Tbsp lemon juice
1 tsp vanilla extract
1½ cups fresh blueberries
Instructions
1. Preheat oven and grease muffin tin.
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Combine gently.
5. Fold in blueberries and zest.
6. Fill muffin cups.
7. Bake until golden.
8. Cool and serve.
Notes
Do not overmix.
Freeze well for meal prep.
