Description

Blackened Shrimp Stroganoff made with Cajun-seasoned shrimp, sautéed mushrooms, roasted red peppers, and a creamy sour cream sauce served over fettuccini.


Ingredients

1 pound fresh shrimp, peeled and deveined

1 tablespoon olive oil

1 tablespoon Cajun seasoning

6 ounces fettuccini pasta

1 tablespoon butter

3 cups fresh mushrooms, sliced

1 tablespoon chopped shallots

2/3 cup chicken broth

1/2 cup sour cream

1 tablespoon cornstarch

1 cup chicken broth

1 (7-ounce) jar roasted red bell peppers, drained and chopped

1 tablespoon drained capers


Instructions

1. Toss shrimp with olive oil and Cajun seasoning.

2. Cook fettuccini until al dente; drain.

3. Sauté mushrooms and shallots in butter; set aside.

4. Cook shrimp until pink; remove.

5. Reduce broth in pan.

6. Mix sour cream and cornstarch; whisk in broth and add to pan.

7. Cook until thickened.

8. Return shrimp and vegetables; heat through.

9. Serve over pasta.

Notes

Do not overcook shrimp.

Reserve pasta water if sauce needs thinning.

Best served immediately.
