Description
A hearty taco soup made with ground beef, beans, corn, tomatoes, and bold taco seasoning perfect for cozy dinners and game days.
Ingredients
1 lb ground beef
1 tbsp olive oil
1 medium onion, diced
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can corn, drained
1 (15 oz) can diced tomatoes
1 (10 oz) can diced tomatoes with green chilies
1 (4 oz) can diced green chilies (optional)
1 packet taco seasoning
1 packet ranch dressing mix
2 cups beef broth
Salt & pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat and cook onion until softened.
2. Add ground beef and cook until browned, draining excess fat.
3. Stir in taco seasoning and ranch mix.
4. Add tomatoes, beans, corn, chilies, and broth.
5. Simmer uncovered for 20–25 minutes, stirring occasionally.
6. Adjust seasoning and serve with desired toppings.
Notes
Use ground turkey for a lighter version.
Adjust spice level by adding or omitting green chilies.
