Baked sweet potatoes stuffed with smoky BBQ chicken for an easy healthy dinner.
Ingredients
5 medium sweet potatoes
1 Tbsp olive oil
1¾ tsp salt
3 cups cooked shredded chicken
1 cup barbecue sauce
1 Tbsp honey
½ tsp chili powder
Instructions
1. Bake sweet potatoes until tender.
2. Heat chicken with BBQ sauce.
3. Slice potatoes and stuff with chicken.
4. Add toppings and serve.
