1/2 cup BBQ sauce

2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon paprika

1 cup cooked quinoa or brown rice

1 cup corn kernels

1 red bell pepper, diced

1 avocado, sliced

Fresh cilantro

Instructions
