Description
Baked Lemon Blueberry Donuts bursting with fresh blueberries and lemon zest, topped with a tangy lemon glaze.
Ingredients
3/4 cup granulated sugar
1/4 cup unsalted butter, melted
1/4 cup oil
1 cup buttermilk
2 large eggs
2 teaspoons vanilla extract
2 teaspoons lemon zest
2 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup fresh blueberries
Glaze: 2 cups powdered sugar, 7-8 tablespoons lemon juice
Instructions
1. Preheat oven to 425°F and grease pans.
2. Whisk sugar, butter, and oil.
3. Add buttermilk, eggs, vanilla, and zest.
4. Mix in dry ingredients.
5. Fold in blueberries.
6. Pipe into donut pans.
7. Bake 7–8 minutes.
8. Cool completely.
9. Dip in lemon glaze and set.
Notes
Do not overmix batter.
Cool fully before glazing.
Store airtight up to 3 days.
