Baked Cottage Cheese Eggs made with blended cottage cheese, eggs, Parmesan, and herbs for a fluffy, protein packed breakfast perfect for busy mornings.
Ingredients
1 cup cottage cheese
4 large eggs
1/2 cup Parmesan cheese
Optional scoop protein powder
2 tbsp fresh chives
1 tsp garlic powder
1 tsp paprika
Salt to taste
Black pepper to taste
Optional: 1 cup bell peppers
Optional: 1 cup spinach
Optional: 1/2 cup sun-dried tomatoes
Instructions
1. Preheat oven to 375°F and grease baking dish.
2. Blend cottage cheese until smooth.
3. Whisk eggs and fold in cottage cheese and seasonings.
4. Add optional mix-ins.
5. Pour into dish and bake 15–17 minutes.
6. Rest before slicing and serve.
Notes
Do not overbake.
Store refrigerated up to 4 days.
