This avocado, tomato and cucumber salad is fresh, vibrant, and tossed in a tangy red wine vinaigrette for a healthy summer dish.
Ingredients
4 medium ripe tomatoes
4 baby cucumbers
1 Hass avocado
1/2 red onion, diced
1/2 bunch fresh basil, chopped
6 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
3/4 teaspoon kosher salt
3/4 teaspoon sugar
1 garlic clove, pressed
1 teaspoon dried oregano
Pinch black pepper
Instructions
1. Cut tomatoes into bite-sized pieces.
2. Slice cucumbers and avocado.
3. Combine vegetables and basil.
4. Whisk dressing ingredients.
5. Toss gently and serve.
