A quick and healthy avocado toast breakfast featuring fresh vegetables and eggs.
Ingredients
2 medium avocados
4 slices whole-grain or sourdough bread
2 eggs
1 cup cherry tomatoes, halved
1 handful spinach or arugula
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper to taste
Red pepper flakes (optional)
Instructions
1. Toast the bread.
2. Mash avocados with lemon, salt, and pepper.
3. Spread avocado on toast.
4. Top with tomatoes and greens.
5. Cook eggs and place on toast.
6. Drizzle with olive oil.
7. Serve warm.
Notes
Use ripe but firm avocados.
Customize with seeds or smoked salmon.
