Creamy white chicken lasagna layered with spinach béchamel, ricotta, and mozzarella.
Ingredients
9 lasagna noodles
4 cups shredded chicken
1 Tbsp olive oil
1 onion, chopped
4 Tbsp butter
1/3 cup flour
2 1/2 cups chicken broth
1 1/2 cups half and half
5 oz fresh spinach
3 garlic cloves
2 tsp salt
1/2 tsp black pepper
15 oz ricotta cheese
1 egg
1/4 cup parsley
1/4 cup parmesan
3 cups mozzarella cheese
Instructions
1. Cook noodles al dente.
2. Make béchamel with onion, butter, flour, broth, cream, spinach.
3. Mix ricotta, egg, parsley, parmesan, mozzarella.
4. Layer noodles, cheese mixture, chicken, sauce.
5. Bake covered, then broil uncovered.
Notes
Let lasagna rest before slicing.
Use rotisserie chicken to save time.
