Description
Traditional Adasi recipe made with lentils, oats, turmeric, and fresh herbs. This Persian lentil soup is hearty, comforting, and naturally vegan.
Ingredients
2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
¼ cup fresh parsley, chopped
1½ cups brown lentils, uncooked
½ cup rolled oats
½ tsp turmeric
8 cups vegetable stock
½ tsp salt
½ tsp black pepper
Lemon wedges for serving
Instructions
1. Heat olive oil in a large pot.
2. Sauté onion, garlic, and parsley until fragrant.
3. Add lentils, oats, and turmeric and stir well.
4. Pour in vegetable stock and bring to a boil.
5. Reduce heat and simmer until thick and tender.
6. Season with salt, pepper, and lemon juice.
7. Serve hot.
Notes
Adjust consistency with extra stock if needed.
Soup thickens as it cools.
Serve with lemon wedges for best flavor.
