30 Minute Creamy Tomato Gnocchi with Burrata made with jammy tomatoes, garlic, cream, and fresh basil.
Ingredients
1/4 cup extra-virgin olive oil
6–8 garlic cloves, crushed
2 pints cherry tomatoes
1/2 tsp red pepper flakes
1 tsp kosher salt
1/2 tsp black pepper
1/2 cup heavy cream
2 (16-oz) packages potato gnocchi
2 (4-oz) balls burrata cheese
1/2 cup fresh basil
Instructions
1. Boil salted water.
2. Cook garlic in olive oil.
3. Add tomatoes and cook until jammy.
4. Season and add cream.
5. Cook gnocchi.
6. Reserve pasta water.
7. Combine gnocchi with sauce.
8. Add basil and burrata.
9. Serve immediately.
Notes
Best served fresh.
Use ripe tomatoes for best flavor.
